Rich and Creamy Italian Sausage Soup with Parmesan

 

 

 

 

 

 

 

 

Ingredients:

1 lb Italian sausage (mild or spicy)
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups baby spinach
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons olive oil

In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon as it cooks.
Once the sausage is browned, add the chopped onion and garlic to the pot. Cook for about 3-4 minutes, until the onion becomes translucent.
Pour in the chicken broth and bring to a simmer. Let it cook for 5-7 minutes.
Add the heavy cream, Parmesan cheese, dried basil, and dried oregano. Stir well to combine and simmer for another 5-10 minutes, allowing the flavors to meld together.
Season with salt and pepper to taste.
Stir in the spinach and cook for an additional 2-3 minutes until wilted.
Remove from heat and serve hot, garnished with additional Parmesan if desired.
