For the Chimichurri:
2 tablespoons red wine vinegar
1/2 teaspoon red pepper flakes (optional)
1/4 cup finely chopped fresh parsley
2 tablespoons finely chopped fresh cilantro (optional, or use more parsley)
2 garlic cloves, minced
1/2 teaspoon dried oregano
1/4 cup olive oil
Salt and pepper to taste
For the Shrimp:
1 lb shrimp, peeled and deveined
1-2 tablespoons olive oil
Salt and pepper to taste
Instructions:
1. Make the Chimichurri:
In a bowl, combine red wine vinegar, red pepper flakes, parsley, cilantro, garlic, oregano, olive oil, salt, and pepper. Mix well and set aside to let flavors meld.
2. Prepare the Shrimp:
Pat shrimp dry, season with salt and pepper.
3. Cook the Shrimp:
Heat olive oil in a skillet over medium-high heat. Add shrimp and cook 2-3 minutes per side until pink and opaque.
4. Serve:
Drizzle chimichurri sauce over cooked shrimp or toss shrimp in the sauce. Serve as is or with rice, salad, or crusty bread.
