1 pound lean ground beef – The base of the taco filling.

4 to 6 medium Russet potatoes – The perfect fluffy vessel for toppings.

1 packet (1 ounce) taco seasoning – Adds that classic taco flavor.

Β½ cup water – Helps blend the seasoning into the beef.

1 cup shredded cheddar cheese – Melty, cheesy goodness.
Β½ cup sour cream – For a creamy, tangy contrast.

ΒΌ cup chopped green onions – Adds freshness and a mild onion flavor.

Β½ cup diced tomatoes – A juicy pop of color and taste.

How to Make Taco Potatoes

Bake the Potatoes
Preheat your oven to 400Β°F (200Β°C). Wash and scrub the potatoes, then pierce them several times with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until fork-tender.

Cook the Taco Beef
While the potatoes bake, heat a large skillet over medium heat. Add the ground beef and cook until browned and fully cooked, breaking it apart with a spatula. Drain any excess grease.

Season the Beef
Stir in the taco seasoning and Β½ cup of water, then let it simmer for 5 minutes until the mixture thickens.

Assemble the Taco Potatoes
Once the potatoes are done, let them cool slightly before slicing them open. Fluff the insides with a fork, then spoon the seasoned beef over each potato.
