Dinner goals! Garlic Butter Shrimp and Steak with Herbed Potatoes. Who needs a fancy restaurant when you can make this at home? ✨️
Ingredients:
– 1 lb (450g) large shrimp, peeled and deveined
– 1 lb (450g) steak (ribeye or sirloin), about 1-inch thick
– 2 lbs (900g) baby potatoes, halved
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 1 teaspoon fresh rosemary, chopped
– 1 teaspoon fresh thyme, chopped
– Salt and pepper to taste
– 2 tablespoons olive oil
– Fresh parsley, for garnishing
Directions:
- Preheat your oven to 400°F (200°C). Toss the potatoes with 1 tablespoon olive oil, rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until golden and tender.
- While the potatoes are roasting, season the steak with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare, or to your desired doneness. Let it rest for 5 minutes, then slice against the grain.
- In the same skillet, melt 2 tablespoons of butter. Add the garlic and sauté for 1 minute. Add the shrimp and cook for 2-3 minutes on each side, until pink and cooked through. Remove from heat and sprinkle with fresh parsley.
- In a small saucepan, melt the remaining butter with thyme, pour over the shrimp and steak.
- Serve the shrimp and steak with the roasted herbed potatoes on the side.
