Ingredients:
For the Steak:
1 lb (450g) sirloin or ribeye steak, cut into 1-inch pieces or strips
Salt & black pepper, to taste
1 tsp smoked paprika (optional)
1 tbsp olive oil
For the Potatoes:
1 lb baby potatoes, halved or quartered
1 tbsp olive oil
Salt & pepper
Garlic Butter:
4 tbsp unsalted butter
4–5 garlic cloves, minced
1 tsp Italian seasoning or fresh thyme/rosemary
1 tbsp chopped fresh parsley (for garnish)
Optional: pinch of crushed red pepper flakes
Instructions:
1. Prepare the Potatoes
Boil potatoes in salted water for 7–10 minutes until just tender (not mushy). Drain and pat dry.
In a large skillet, heat 1 tbsp olive oil over medium-high heat.
Add potatoes, season with salt and pepper, and cook until golden and crispy on the edges (~5–7 minutes). Remove and set aside.
2. Sear the Steak
Season steak pieces with salt, pepper, and paprika.
In the same skillet, add 1 tbsp olive oil and sear the steak on high heat for 2–3 minutes per side until browned and medium-rare to medium (depending on your preference). Remove and set aside.
3. Make the Garlic Butter Sauce
Lower heat to medium. Add butter to the skillet.
Stir in minced garlic and herbs. Cook for 1–2 minutes until fragrant (don’t burn the garlic!).
4. Bring It Together
Return steak and potatoes to the skillet.
Toss everything gently in the garlic butter sauce until well-coated and heated through (1–2 minutes).
Sprinkle with parsley and crushed red pepper if desired.
