โ€“ 4 salmon fillets (about 6 oz each)
โ€“ 2 cups cherry tomatoes, halved
โ€“ 3 tbsp olive oil
โ€“ 3 cloves garlic, minced
โ€“ 1 tsp dried oregano (or Italian seasoning)
โ€“ ยฝ tsp red pepper flakes (optional)
โ€“ Juice of 1 lemon
โ€“ Salt & pepper to taste
โ€“ Fresh basil or parsley for garnish

1. Preheat oven to 400ยฐF (200ยฐC).
2. Prepare the salmon: Pat dry the fillets and season with salt, pepper, and a drizzle of olive oil.
3. Arrange on a baking sheet: Spread cherry tomatoes around the salmon. Drizzle with remaining olive oil, garlic, oregano, red pepper flakes, and lemon juice.
4. Bake for 12โ€“15 minutes, or until the salmon flakes easily with a fork.
5. Garnish with fresh basil or parsley. Serve hot.

Approx. 350โ€“400 kcal per serving.
