Preheat the oven: Preheat the oven to 400°F, or 200°C. Grease a baking dish gently or line it with parchment paper to prepare it.
Get the courgette and tomatoes ready. Cut the tomatoes and zucchini into rounds that are 1/4 inch thick. Place them on the prepared baking dish in an alternative arrangement, gently overlapping each slice to make a beautiful design.
Spice up the veggies: Minced garlic, olive oil, dried oregano, dried basil, salt, and pepper should all be combined in a small dish. properly pour the mixture over the tomatoes and zucchini, being sure to properly distribute the garlic and herbs.
Add the Cheese: Evenly top the assembled zucchini and tomato slices with shredded Gouda cheese. As it bakes, the cheese will melt and form a beautifully bubbly, golden topping.
Bake the Dish: Bake the baking dish in the preheated oven for 20 to 25 minutes, or until the cheese is melted and browned, the zucchini is soft, and the tomatoes are slightly softened.
Garnish and Serve: Take the dish out of the oven when it has finished baking and let it cool a little. Add some freshly chopped parsley or basil as a garnish for some colour and freshness.
To serve, arrange the warm Baked Zucchini with Tomatoes and Gouda Cheese over grilled fish, meats or pasta dishes. It may also be eaten as a light, vegetarian main meal served on its own.
