Garlic and Herb Leg of Lamb with Potatoes

โ€“ 1 leg of lamb (4-5 lbs)
โ€“ 4 cloves garlic, minced
โ€“ 2 tbsp olive oil
โ€“ 1 tbsp fresh rosemary, chopped
โ€“ 1 tbsp fresh thyme, chopped
โ€“ 1 tsp salt
โ€“ 1/2 tsp black pepper
โ€“ 2 lbs potatoes, halved
โ€“ 1 cup chicken broth

1. Preheat oven to 375ยฐF.
2. Mix garlic, oil, rosemary, thyme, salt, and pepper; rub over lamb.
3. Place lamb in a roasting pan, surround with potatoes, and pour in broth.
4. Roast for 1.5-2 hours, basting occasionally, until desired doneness.
5. Rest for 10 minutes before slicing. Serve with roasted potatoes.
